Mom's Black Bean Soup |
| This low-fat, but tasty soup recipe was given to me while on vacation in the Caribbean. Spicy, flavorful, easy to make — this Black Bean Soup Recipe is sure to please. |

Ingredients |

- 2 cups vegetable or chicken stock
- 1 cup water
- 4 garlic cloves, crushed
- 1 medium onion, diced
- 1 large red bell pepper, diced
- 1 can (19 fl. ounces) black beans, drained and rinsed
- 2 teaspoons cumin
- 1 teaspoon coriander
- Juice of one lime
- 1/2 cup low-fat yogurt
- 1/4 cup fresh cilantro, minced
- Knives
- Measuring spoons
- Measuring cup
- Medium sauce pan with lid
- Food processor

Black Bean Soup |
In a medium pot, mix together the stock, water, garlic, onion, and red pepper. Bring to a boil. Add the black beans, cumin, and coriander; stir. Cover and simmer for 25 minutes or until the onion and red pepper are soft. Transfer soup to the bowl of a food processor and purée. Add the lime juice. Mix well. Ladle the soup into bowls and top with the yogurt and cilantro. Serves 4.

| For those of you who don't like cilantro, you may substitute minced, fresh parsley or simply omit any garnish. |
