Mom's Corn Bread |
| Nutritious and filling — corn bread is an easy recipe to make and is a delightful substitute for bread. This easy corn bread recipe goes well with Best-Ever Chili. |

Ingredients |

- 1 cup white flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup cornmeal
- 1/4 cup butter
- 1 large egg
- 1 cup milk
- 4 tablespoons plain no fat yogurt
- 3 tablespoons finely chopped red pepper
- 3 tablespoons finely chopped green pepper
- 3 tablespoons cooked and crushed bacon
- 3 tablespoons shredded cheddar cheese
- 1 can creamed corn (10 ounces)
- 3 teaspoons dried basil leaves
- Mixing bowls and spoons
- Measuring spoons
- Egg beater
- 8" X 8" baking pans

All-Time Favorite Corn Bread |
In a bowl soak cornmeal, milk and yogurt over night. In a separate bowl beat butter and egg then add to the cormeal mixture. Add can creamed corn to this mixture. In another bowl mix flour, baking powder, baking soda, chopped red and green peppers, crushed bacon, and basil leaves. Mix cornmeal mixture into dry ingredients. Pour final mixture into 8" X 8" greased baking pans. Bake at 400º F for 30 minutes. Allow to cool, then cut into squares.

| Serve with lots of butter. You can enjoy corn bread with jam, honey, or maple syrup for breakfast or along with soup or chili for lunch and dinner. |
