Mom's Hawaiian Carrot Cake |

Ingredients |

- 2 cups unsifted flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 cups sugar
- 3/4 cup mayonnaise
- 1 can (8 ounces) crushed pineapple undrained
- 2 1/2 cups shredded carrots
- 3/4 cup chopped walnuts
- Measuring cup and measuring spoons
- Mixing bowls and spoons
- Egg beater
- 2 8" X 4" baking pans

Hawaiian Carrot Cake |
In a mixing bowl stir together first five ingredients. In a large mixing bowl beat eggs, sugar, mayonnaise and pineapple until well blended. Gradually beat in flour mixture. Stir in carrots and walnuts. Turn mixture into the two 8" X 4" greased baking pans. Bake in a 350º F oven for 60 minutes. Let cool.
You may ice your Hawaiian Carrot Cake with a cream cheese icing. To make this icing simply blend equal parts of cream cheese and icing (powdered) sugar (about 1/2 cup each).
