Mom's Date Squares (Matrimonial Cake) |
| This Date Square recipe, sometimes called Matrimonial Cake, is very easy to make. Dates are rich in fibre and nutrients so you can feel good about giving them to your family. |

Ingredients |

CRUMB LAYERS
- 1 1/4 cups flour
- 1 1/2 cups rolled oats
- 1 cup brown sugar packed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup margarine
FILLING
- 1/2 cup dated chopped
- 1/2 cup sugar
- 1 cup water
- 1 teaspoon baking soda
- 1 1/4 teaspoons baking powder
- 3/4 cup crushed walnuts
- Measuring cup and measuring spoons
- Mixing bowls and spoons
- Sauce pan
- 9" X 9" baking pans

CRUMB LAYERS: Measure flour, oats, brown sugar, soda, salt and margarine into large bowl. Cut margarine into the ingredients until crumbly. Press two-thirds of crumb mixture into a greased 9" X 9" baking pan.
FILLING: In a sauce pan combine dates, sugar and water. Bring to a boil and allow to simmer until mushy. Spread over bottom layer of crumbs. Sprinkle remaining one-third crumb mixture over top of the filling layer. Press down and flatten with your hand. Bake in 350º F oven for 30 minutes until a rich, golden brown. Allow to cool. Cut into squares (about 36 squares).

| For the filling of this date square recipe you may add more water if dates become too dry before they soften. If you have too much water, don't worry — just keep the filling simmering until the extra water has boiled away. |
