Maple and Toasted-Walnut Bread |
Preheat oven to 350º F. Lightly coat 9 X 5 inch loaf pan with non-stick, cooking spray. Put flour into large bowl and make a well in the center. Beat margarine in medium bowl with wooden spoon until creamy; blend in maple syrup. Beat in egg, and then milk and vanilla. Pour mixture into well of flour and stir just until flour disappears. Do not overbeat; a few lumps are OK. Stir in walnuts.
Scrape batter into loaf pan. Bake until golden brown and a toothpick inserted in center comes out with moist crumbs — about 50 minutes. If bread browns too fast, loosely cover with foil (shiny side up) during the last 15 minutes of baking.
Cool in pan on wire rack for 10 minutes. Turn bread onto rack to cool.
