Mom's Parmesan Chicken Breasts

This low fat (11 g), low cholesterol (105 mg) Parmesan Chicken Breasts is quick and easy to make. Serve with your favorite salad and whole wheat breadsticks.

Ingredients

  • 1/2 cup (2 ounces) grated Parmesan Cheese
  • 1/4 cup dry bread crumbs
  • 1 teaspoon each dried oregano leaves and parsley flakes
  • 1/4 teaspoon each paprika, salt and black pepper
  • 6 boneless skinless chicken breast halves (about 2 lbs)
  • 2 tablespoons butter or margarine, melted
  • Measuring cups and measuring spoons
  • Mixing bowls
  • Non-stick cooking spray
  • 15 X 10 X 1-inch baking pan

Parmesan Chicken Breasts

Mix cheese, crumbs and seasonings. Dip chicken in butter; coat with cheese mixture. Place in 15 X 10 X 1-inch baking pan sprayed with no-stick cooking spray. Bake 20 to 25 minutes at 350º F oven until cooked through. Serves 6.

Helpful Hints

For a spicy variation substitute 1/8 to 1/4 teaspoon ground red pepper for black pepper.
