Mom's Turkey Tarragon for Two |
| This is a very simple version of a well-known classic. One pot, easy to make, just for two — romantic! Turkey Tarragon for Two is also low in fat. |

Ingredients |

- 1 large turkey leg
- 2 tablespoons oil
- 2 tablespoons butter
- 1 medium onion, chopped
- 1 cup apple juice
- 1 teaspoon tarragon
- 3 tablespoons sour cream
- 1 teaspoon arrowroot
- salt and pepper to taste
- 1/4 pound sliced mushrooms
- Measuring cups and measuring spoons
- Large saucepan with lid
- Knives

Turkey Tarragon for Two |
On high heat, brown turkey leg all over in oil and butter. Turn heat on low. Add and fry chopped onion to turkey leg. Add apple juice and tarragon. Cover. Simmer for one hour. Add mushrooms. Cook for 10 minutes with the lid off. Remove turkey leg and set aside. Add sour cream and arrowroot. Cook gently until thickish. Place rice on plate, turkey leg on rice, sauce over leg. Serves 2.

Helpful Hints |

| If you haven't got arrowroot, use two teaspoons cornstarch. But arrowroot is much better, it's smoother, and translucent. |
