Mom's Velvet Chicken and Mushrooms |

Ingredients |

- 2 fresh de-boned chicken breasts, sliced thin
- 3 teaspoons cornstarch
- 1 teaspoon oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 chicken soup cube
- 1/2 pound small mushrooms
- 1/4 inch chopped ginger
- 1 clove garlic, chopped fine
- 1 tablespoon oil
- Measuring cups and measuring spoons
- Mixing bowl
- Saucepan
- Fryingpan
- Knives

Velvet Chicken and Mushrooms |
Slice very thin chicken breasts. Mix with 1 teaspoon cornstarch, 1 teaspoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Let sit. Add soup cube to 2/3 cup boiling water. In a bowl, pour mixture over 1/2 pound mushrroms, 2 teaspoons corstarch, 1/2 teaspoon salt and 1/4 teaspoon pepper. In a hot pan, fry ginger and garlic in 1 tablespoon oil until just not brown. Add the chicken to pan for 30 seconds. Add mushroom mixture to chicken while stiring a lot. Cook until done (chicken breast is white) for about 5 minutes on low-medium heat. Do not overcook.
