Mom's Hot Bacon Canapés |
| This Hot Bacon Canapé appetizer recipe is a must for any holiday party. Hot Bacon Canapés can be made ahead of time and are very tasty. Chicken and olives wrapped in bacon is a tasty combination. Enjoy with your favorite Christmas Drinks and Herbed Cheese Appetizers. |

Ingredients |

- 1 boneless chicken breast
- 1/4 teaspoon salt
- 20 bacon slices cut in half crosswise
- 40 pimiento-stuffed olives
- Knives
- Measuring spoons
- Medium saucepan
- Cookie sheet
- 40 wooden toothpicks

Hot Bacon Canapés |
Cook chicken in boiling water and salt, about 30 minutes, until tender. Cut chicken into pieces a little bigger than olives (you should have around 40 pieces). Cook bacon in frying pan until almost done. If cooked too long the bacon strips will break when rolled. Drain bacon on paper towel. Hold olice and chicken piece together. Wrap with bacon and skewer together with wooden toothpick. Chill. When ready to serve, heat in 400º F oven for about 10 minutes until hot.

| For Bacon Wiener Bobs use wiener pieces instead of chicken. Omit olive. For Fruity Chicken Canapés use pineapple chunks instead of olives. Serve with Sweet and Sour Sauce. You may substitute water chestnuts for the olives in this Hot Bacon Canapé recipe. If you choose to use the water chestnuts, dip the Hot Bacon Canapé in seafood sauce. |
