Mom's Empanadas |
| This Empanada Recipe is easy to make and is a great way to use up extra ground beef. This Empanada Recipe has an authentic Mexican flavor to it. Great while watching the Super Bowl! |

Ingredients |

- 2 tablespoons cooking oil
- 1 cup finely chopped onion
- 1 small green pepper, chopped
- 1/2 pound lean ground beef
- 3/4 cup drained canned tomatoes, mashed
- 2 tablespoons chopped raisins
- 2 tablespoons chopped green olives
- 1/2 teaspoon salt
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon hot pepper sauce
- 1 large hard-boiled egg, chopped
- 1 large egg, beaten
- Pastry mix
- Measuring spoons
- Measuring cups
- Knives
- Frying pan
- Baking sheet
- Rolling pin
- Pastry board

Empanadas |
Heat cooking oil in frying pan. Add onion, green pepper and ground beef. Sauté until soft and no pink remains in the meat. Add tomatoes, raisins, olives, Worcestershire sauce, hot pepper sauce, and salt. Simmer for 5 minutes stirring often. Remove from heat. Cool. Add chopped egg. Stir. Makes 2/14 cups filling.
Roll pastry on lightly floured surface. Cut into 3-inch circles. Put 1 teaspoon filling in center of each circle. Dampen edge half way around with beaten egg. Fold over and seal with fork. Cut small slit in top. Arrange on ungreased baking sheet. Bake in 400º F oven for about 15 minutes until browned. Makes about 90.
